• 2 shallots , chopped
  • 1 tsp grated ginger
  • 1 green chilli , sliced
  • oil , for frying
  • 1 or 2 eggs
  • a drizzle of sweet chilli sauce , to serve
  • chopped spring onion , to serve
  • bread or toast, to serve

Directions:

  1. Fry the shallots, ginger and chilli in a little oil until softened. Break in eggs and cook until the whites are set. Serve with sweet chilli sauce, a scattering of spring onion and bread or toast.
