• 4 Fuji or Macintosh apples
  • 2 tsp lemon juice
  • 6 tsp golden raisins
  • 4 tsp brown sugar
  • 2 tsp ground cinnamon
  • Vanilla extract
  • 1/2 cup rum or sherry (optional; use apple juice instead)
  • Light whipped cream or light vanilla ice cream/soy ice cream

Directions:

Preheat oven to 350°F. Core each apple but do not cut through, so that the bottom remains intact. Remove 1/2 inch of the peel at the top of the apple.

Place apples in a baking dish and sprinkle with the lemon juice. Fill centers with raisins and brown sugar. Drizzle with vanilla extract and sprinkle with cinnamon.

Pour rum, sherry or juice into bottom of the dish. Bake for 30-35 minutes, basting several times during cooking. Let stand for 3 minutes, then top with light whipped cream or light vanilla ice cream.
