• 1 cup old-fashioned oats
  • 1 cup flour
  • 1/4 cup light brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 2/3 cups low-fat buttermilk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon pure vanilla extract
  • 1 cup raisins

DIRECTIONS:

Whisk the oats, flour, sugar, baking powder, soda and salt together in a medium bowl.  In another bowl, whisk together the buttermilk, eggs, butter and vanilla.  Pour the liquid ingredients over the dry and whisk gently to combine.  Stir in the raisins.

Lightly oil or spray a griddle or skillet and preheat it over medium heat. For each pancake, drop 1/4 cup batter onto the griddle, leaving room for spreading.  Pat the batter into rounds and cook until the bottoms are golden; flip and cook the other side.  Serve hot off the griddle with maple syrup and/or plain yogurt.
