• 3 Tbsp vegetable oil
  • 1 lb mixed mushrooms, sliced
  • 1 clove garlic, minced
  • 1 Tbsp grated fresh ginger
  • 6 scallions, sliced thin
  • 1½ cups long-grain rice, cooked
  • ½ tsp salt
  • ¼ cup soy sauce
  • 1 cup frozen peas
  • 1 tsp sesame oil

DIRECTIONS:

1. In a nonstick frying pan, heat 2 Tbsp oil over medium-high. Add mushrooms; cook, stirring, 5 minutes. Remove to plate.

2. Heat remaining Tbsp oil in pan over medium; add garlic, ginger, and scallions. Stir for 30 seconds. Increase heat to high; add rice, salt, soy sauce, peas, and reserved mushrooms. Cook, stirring, 2 minutes. Remove from heat; stir in sesame oil.
