• 6 potatoes, peeled, cooked, and mashed
  • 2 eggs
  • ¼ cup seasoned bread crumbs
  • 1 Tbsp parsley
  • ¼ cup flour
  • 1/3 cup canola oil

In a large bowl, combine the potatoes, eggs, bread crumbs, and parsley. Shape into small ovals. Roll in flour. Fry in hot oil, turning, for 5 minutes or until crisp and very hot.
