• 1 1/3 cups fresh or frozen diced pineapple, in juice (or canned pineapple without added sugar)
  • 1/4 cup pineapple juice (from the fresh or canned pineapple without added sugar)
  • 2 tablespoons stevia or monk fruit sweetener
  • 1/2 cup light coconut milk
  • 1 tsp coconut extract
  • 1 Tbsp dark rum (optional)
Directions:
Cut the pineapple into chunks. Puree the pineapple along with the juice in a blender with natural sweetener, light coconut milk, coconut extract and rum if using, until smooth. Pour into popsicle molds and freeze.
