• 2 shallots , chopped
  • 1 tsp grated ginger
  • 1 green chilli , sliced
  • heart-healthy oil, for frying (olive, canola, or avocado oil)
  • 1 or 2 eggs (in moderation, depending on your weekly intake)
  • a drizzle of low-sugar, low-sodium sweet chilli sauce, to serve (or skip the sauce entirely)
  • chopped spring onion, to serve
  • whole grain bread or toast, to serve

Directions:

  1. Fry the shallots, ginger and chilli in a little oil until softened. Break in eggs and cook until the whites are set. Serve with sweet chilli sauce, a scattering of spring onion and bread or toast.
