- 2 shallots , chopped
- 1 tsp grated ginger
- 1 green chilli , sliced
- oil , for frying
- 1 or 2 eggs
- a drizzle of sweet chilli sauce , to serve
- chopped spring onion , to serve
- bread or toast, to serve
Directions:
- Fry the shallots, ginger and chilli in a little oil until softened. Break in eggs and cook until the whites are set. Serve with sweet chilli sauce, a scattering of spring onion and bread or toast.
