• 75g unsalted butter , softened (or other plant-based oil, such as avocado or olive oil)
  • 70g stevia or monk fruit sweetener
  • 50g plain flour
  • 175g wholemeal flour
  • 2 tsp baking powder (low-sodium or sodium-free)
  • 2 eggs
  • 4 ripe bananas , mashed
  • 50g pecans , each snapped in half
  • 1 lemon , juiced (optional)

Directions:

  1. Heat the oven to 180C/fan 170C/gas 4. Beat the butter, natural sweetener, flours, baking powder, eggs and banana together. Stir in the nuts and spoon into a lined and buttered 450g loaf tin.
  2. Bake for 50 minutes or until a skewer comes out clean. spoon over the lemon, if using.
