- 75g unsalted butter , softened (or other plant-based oil, such as avocado or olive oil)
- 70g stevia or monk fruit sweetener
- 50g plain flour
- 175g wholemeal flour
- 2 tsp baking powder (low-sodium or sodium-free)
- 2 eggs
- 4 ripe bananas , mashed
- 50g pecans , each snapped in half
- 1 lemon , juiced (optional)
Directions:
- Heat the oven to 180C/fan 170C/gas 4. Beat the butter, natural sweetener, flours, baking powder, eggs and banana together. Stir in the nuts and spoon into a lined and buttered 450g loaf tin.
- Bake for 50 minutes or until a skewer comes out clean. spoon over the lemon, if using.
