• 1 lb ground pork
  • 2 Tbsp chopped fresh cilantro
  • 1½ Tbsp lime juice
  • 1 piece (2") ginger, grated
  • 1 carrot, shredded
  • Salt & pepper
  • 1 cup Asian peanut sauce

Directions:
1. Heat oven to 375°F. Line a baking sheet with parchment or foil.

2. In a large bowl, combine everything but sauce. Shape into 1½” balls; set on sheet. Bake, flipping halfway through, until deep golden, 30 minutes.

3. Serve with peanut sauce for dipping, plus lime wedges (optional).
