- 1 cup flour
- 6 Tbsp sugar
- 2 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup peanut butter
- 2 large eggs
- 2/3 cup low-fat milk
- 4 Tbsp unsalted butter, melted
- 1 cup chocolate chips
Directions:
1. Whisk dry ingredients together. Using a rubber spatula, beat in the peanut butter until it’s soft, then stir in the eggs, milk, and butter.
2. Mix in the chocolate chips. Lightly oil a skillet and preheat it over medium heat. For each pancake, drop 1/3 cup batter onto the skillet. Pat into rounds and cook until bottoms are golden; flip and cook other side.
3. Let cool; serve with ice cream and hot fudge.
