• 1 cup cottage cheese
  • 1/3 cup all-purpose flour
  • 2 Tbsp canola oil
  • 3 eggs, lightly beaten
  • 2 Tbsp sugar
  • 1/8 tsp salt
  • Cooking spray
  • Maple syrup, butter, and sliced fresh strawberries, for toppings

DIRECTIONS:

1. In a blender, combine cottage cheese, flour, oil, eggs, sugar, and salt. Blend until smooth. Thin slightly with water, if necessary.

2. Preheat a griddle pan on medium. Coat with cooking spray. Pour batter, using 1/3 cup per pancake, onto pan. (Makes about 8 pancakes.) Cook until bubbles appear. Flip and cook until golden. Serve with toppings.
